Hou-tou. This is the ‘meibutsu’ or famous product from Yamanashi prefecture. It’s basically udon noodles cut a little bit thicker. This place also seemed to add more flour to the noodle mixture. It was still good though! Mixed with some ‘namban-miso’ another product from here, provided the spicy kick to the soup!

    • it has a very unique taste… different from udon, that’s for sure (the noodles, themselves. the soup is always different though..!)
